Today marks the 8th snow day this school year. My week sounds a little like that of The Very Hungry Caterpillar (Eric Carle) but my version isn’t as cute or amusing. Hopefully it will end just as beautifully.
On Sunday, Mother Nature dumps 6 inches of snow during the afternoon and evening hours. I had shoveled out our mailbox that morning (our mail has only been delivered twice since mid-February) but it was all for naught.
On Monday, a 2-hour school delay. The kitchen ceiling shows early signs of leaking.
On Tuesday, a full day of school, but all after-school activities are canceled due to forecasted snow and freezing rain. At 9:00 am our kitchen ceiling springs one leak. Roofing contractor shovels 2 feet of snow off roof and chisels a good 10 inches of ice off the gutters and flashings. By 10:00 pm, the kitchen ceiling is leaking in 7 areas. Grrrrrrr…
On Wednesday, a 2-hour school delay turns into a 3-hour delay and by 9:00 am, school is officially canceled due to icy road conditions. The good news – the kitchen ceiling stops leaking, but another 3-5 inches of snow is forecasted overnight into Thursday.
On Thursday (today), a 2-hour school delay turns into a school closure due to snow (which fell all day long).
On Friday (tomorrow), I assume my kids will go to school on time, but they only have a half-day scheduled.
On Saturday and Sunday, temperatures are forecasted to be above freezing with no precipitation. I’ll believe it when I see it.
Homebound for most of the week, my pantry no longer offers any interesting snack choices. I’m completely caught up on laundry (first-time ever). At this point, what else is there to do but clean out the fridge? Before I get very far, I find a head of cauliflower and some grated parmesan cheese. My kids were watching their second movie of the day with a bowl of popcorn so I roasted the cauliflower and sprinkled on some parmesan cheese. To me, roasted cauliflower is better than popcorn and adding the parmesan cheese created the ultimate snack on this cold winter day.

When cauliflower roasts in the oven it caramelizes, resulting in a sweet taste with a crusty and soft texture. Adding grated parmesan cheese during the last 5 minutes of roasting, adds a nice salty and nutty crunch. This would be a great side dish for any meat or fish main course, but I end up eating all of it right off the baking sheet (and scraping off all the crusty bits of cheese) before it can make its way onto a serving dish.
