Roasted Cauliflower with Parmesan
When cauliflower roasts in the oven it caramelizes, resulting in a sweet taste with a crusty and soft texture. Adding grated parmesan cheese during the last 5 minutes of roasting, adds a nice salty and nutty crunch. This would be a great side dish for any meat or fish main course, but I end up eating all of it right off the baking sheet (and scraping off all the crusty bits of cheese) before it can make its way onto a serving dish.

  1. Preheat oven to 450°
  2. Cut cauliflower into florets. Gently toss in a large bowl with olive oil, salt and pepper.
  3. Layout on a sheet pan.
  4. Roast until tender, 35-40 minutes. Sprinkle grated Parmesan over the cauliflower and roast for an additional 5-7 minutes.
